Legumes play major role in supplementing source of dietary proteins and carbohydrates. In the developing country like India, quest for high yielding protein supplementing varieties are in progress. In order to combat protein calorie malnutrition in India and African countries for under nourished children and lactating mothers, Low cost protein supplementing diet is required. Six new different varieties (Arkel, Pusa pragati, IPF-99-25, JP-885, MM-15, and JP-6) of Pisum sativum are selected and studied for crude protein content, Carbohydrate both reducing and non reducing sugars, calcium, Phosphorus, Crude fiber, Total lipids and other micro nutrients which are digestible and non digestible are also analysed by solubility behavior of ash characteristics in water and acid. This analysis may prove to asses the nutritional quality of the seeds.
